| Typically females (gilts) are a little fattier than barrows (males that are castrated). The Tamworth is a longer, leaner hog,with dark red meat; but not as lean as confinement raised pork. Gloucestershire Old Spots (GOS) are a little fattier, and have more marbling in the meat which is a little less dark. Cross-bred animals have attributes of both breeds. All of our pigs are raised on pasture, and not in confinement. They are not administered hormones or antibiotics. We also do not use pesticides on our property. Pricing is based on the hanging weight of the animal. We will sell 1/4, 1/2 or whole animals. All of our animals are processed at a USDA facility, and will be stamped USDA certified. Custom cutting is an option as well, call for details. Whole or split carcasses are the least expensive option, but require the chef to break down / cut. Our animals are slow grown on pasture and supplemented with grain. Expect them to take 8 months to reach a full market weight. If smaller sizes are desired, please figure roughly 30 pounds per month of age. If you have any questions, please feel free to call. |
